This is due to a bug where tridents are not properly doing damage to mobs in certain situations with the new update. When the bug is fixed, it will begin working again.

This is a Bedrock-wide issue, it’s impossible to exit gliding mode in Creative now. To make it easier, however, you can double tap the sneak button to exit classic creative flying. It will keep the elytra going though and the only way to stop it is to take off the elytra.
