I observed the following with my villagers.  If the bed was next to the door, the door was left open.  I  waited until night time, blocked each door and broke the occupied beds one at a time, placing them back in each house but not next to the door.  I then opened each house and waited for the night cycle.  All prefab housing where I had made sure no bed was next to the door had the doors closed.  I observed this for 3 nights and all the doors were closed when the villagers went to bed.

In the "long house" that I constructed, the villager left the door open on the one night he slept there.  The beds are not arranged near the doors, but the bed he chose was not near the door he opened to enter the house. (is that clear as mud?)  I can take a screen shot of the longhouse configuration, but I think it is only peripherally related.  The long house is 16 doors long and just deep enough to have one space to walk between the wall and the foot of the beds. (14 beds)

Playing a new game 1.14.2 latest release.  Began as a single player, no mods, opened to a LAN game.  I have a naturally spawned village which I fenced off.  The villagers find their beds and workstations without a problem.  They will not close the door when they go to sleep at night.  This happens with single and double doors.  It doesn't happen with every house nor does it seem to happen with the same houses every night.  Obviously there is little danger of them getting killed in their sleep due to lighting and fencing, but I worry about the other villages that I have not secured yet.  As a side note, the villagers seem to be playing musical beds, leaving their previous bed unoccupied in favor of a different resting place.
