I am able to re-create every aspect of this bug and or related bugs in less than an hour of regular game play. Saddling from both a riding position as well as from standing on the side, mounting a saddled horse and even dismounting a saddled horse gives such a high probability for the bug I'll be waiting for the game to be fixed before I play again.
I regularly injure and/or kill myself and/or the horse by simply saddling them either method, mounting a saddled horse, and/or dismounting a horse.
Also, riding my horse over lava pits that I've covered or paths/bridges I've built can cause me and/or my horse to take damage.
