Silly me. SUDO error..
This is still an issue in 1.16. I do not know if it is a bug, but there are definite issues with culling with both entities and blocks that have some level of opacity (leaves and glass etc).
It also happens on the regular slime as well. Please see attached image. Notice the leaves behind are not being displayed?
