It is for me not possible to recreate it since it happens randomly. For me it was also an hour before it started happening. I also don't know if it was caused by unloading and loading chunks again, or just on its own. The carpets were first removed and afterwards placed back at the same spot seconds later. (But then didn't?) Then banner was newly placed (there was no banner before).
I have the same bug, I set the resolution to current, when I restart minecraft, the resolution is fixt to 1080p60 while my monitor is 1080p75. If I change to Fullscreen or to windowed, the resolution stays the same.
Then I think this is the case: A world which had previously been opened with a modified client might be corrupted.
It was
a yellow carpet at -702 14 546,
an end rod at -702 14 545,
a blue carpet at the neighberhood of -677 14 548
And a banner at x: between -650 and -750, y 20, z 454.
These blocks might have been placed there before, and deleted before. (This makes things harder I know)
Maybe when I placed those blocks, they were placed visually, but not phisically meaning that it was never saved.
