Same with me with the disappearing villagers, sheep and minecarts. And newly bred and grown ones are continuing to despawn during the same RL day. I am playing on IOS in a (currently) single player world. Survivor/Peaceful Modes 1.16 still. Luckily, I had made a copy a couple of days prior and was able to start over again from there. I have been saving a copy daily now.
Update: I have worked much of the day to build up this village again. More villagers have despawned. The remaining ones are continuing to breed, but even some of the new ones have accepted a job and then despawned even after trading with them. One of the new ones took a different job site than the first one he chose. I also discovered a hopper minecart despawned. Game continues to crash.
Yes, it's happening to me. Created world in 1.16. Have 3 gateways opened. Today I killed dragon 3X in 1.20.2 with no new gateways opening. Reloading didn't help.
