*ETA: Update! Deleting the '.minecraft' folder and then re-opening the launcher solved the problem for me as well. Still not sure why.
~ Comparison notes for the tech support gods: Opening the launcher in 1.17.1, with no resource packs or mods, I'm able to get to the start screen and open the multiplayer connect screen.
Once I try to connect to a server it goes through the log-in messages normally, until 'Joining world', but then switches to a 'Saving world' (??) message and freezes completely.
Opening the launcher in newer versions works fine.
