I have the same problem. All enchanted armor is not rendering correctly. I tried changing the skin and setting combinations, and resetting it, but nothing changed. Resource packs and behavior packs are not used. This issue did not occur on Windows.

First, I tried to add skin with Google photo app (this is OS standard gallery app) and it makes the same error "This is not a Minecraft skin silly".
After seeing this issue, I installed Google gallery (Gallery Go) and adding skin is succeed.
This issue is bug of only recent version of Minecraft. The method mentioned in the comment is not a fundamental solution and requires modification.
YOU NEED TO ADMIT THE BUG AND RE-OPEN THIS ISSUE TO VERIFY.
This issue is reproductive on Windows 11 Version 22H2 (OS build 22621)
If you have a problem with Windows or IME, you need to report it to Microsoft or Google so only you can debug Minecraft.
You can reproduce a freeze when you install Google Japanese Input in Windows 11 Japanese, launch Minecraft 1.20.31, and focus on some text input form. Please check the error content at that time.
