Nothing really to add, but reiterating all these points below:
We've been playing on the Switch since 1.15 and have never had these kinds of issues. Chunks not loading for upwards of 90 seconds when exploring (by boat) new areas; placing blocks or opening the menu only to have the "loading swirly thingy" start spinning for up to 60 seconds; working on my castle only to find I'm all of a sudden dead because a block I'd placed didn't ever place and I fell to my death (though it didn't show on screen); the Nether (and other places with lots of particles) are basically unplayable.
I keep my video settings on extraordinarily low - no pretty leaves, no pretty sky, no pretty lights, etc, and this has only be happening (this badly - it's always been slow on switch but never this bad) since 1.19.
And to someone saying "try changing video settings," that's like literally the first thing most people do (and have said it in multiple comments here, meaning you didn't read the comments), so that's useless information. This is a bug, not a switch here and there that just isn't as powerful as someone else's switch...
