You also can’t open the Minecraft Updater after this happens and it gets deleted by itself.
After opening the launcher from the terminal in the MacOS folder, these are the results.
I ran the launcher, from the folder. It launched, and started updating and gave the logs shown above. Then as soon as it’s almost at the end, it says “Unable to update the bootstrap.” After this, the launcher got deleted by itself from the MacOS folder.
I then proceeded to download a completely new installer, and the same stuff shown above happened with that installer as well.
No, haven’t found a solution yet.
Issue is still persistent, still have been trying many re-installs. it isn’t working.
Tried starting it a while ago. It did start downloading, first it said “downloading update files”, then got stuck 4/5th of the way and then it said downloading bootstrap files or something, same thing, stuck 4/5th of the way, then went into “cannot download update files”. Now it’s completely broken again and just says “field”. These are the logs.

Been having a very similiar issue, mine doesn’t update either but if I open minecraft in applications it just bounces up and down. When I manually open the minecraft updater, it’s just stuck and says “field”, and native updater logs show it’s unable to update itself. It’s MCL-25861.
The launcher now opens normally, and this happened just today, as I have been checking everyday. This bug is no longer present.
Issue is now fixed, it opens normally now.
It shows that the launcher tries to fetch the update manifest but fails to download it, aborting bootstrap and core updates.
Several config files are missing, which is expected for a fresh install.
The native updater then cleanly shuts down.
These are my native updater logs and launcher logs. (There are no auth tokens or id tokens in these, I’ve made sure.)
Additionally, I gave Minecraft full disk access. Unfortunately, it's still just bouncing in the dock and not launching. Let me know if there’s anything else I should try.
The macbook is not blocking minecraft, already checked it, and it used to work previously as well just fine without having any issues. But yes, I did check and the mac is not blocking minecraft.
NEW UPDATE: THE LAUNCHER WORKS
Tried Re-installing for a second time. This time I copied an extra backup of the launcher file to a folder on my desktop incase it breaks again. Then I tried launching it from the MacOS folder.
This time, however, it slowly updated as usual, closed, then the Minecraft Launcher opened.
