I have been experiencing similar random interval spikes. Which makes the game very difficult to play. My Pocket Edition issues started with 1.20.30 when my Playstation controller stopped working properly do to that update. I posted about it on Reddit https://www.reddit.com/r/Minecraft/s/0XrcivL0AA. Probably within the last 3 months I noticed the lag spikes. I have been playing on a Samsung Z fold 3 5G, 512GB storage, 12GB Ram, I think its a Snapdragon 888 5G processor. I tried to reduce the visuals to see if that made a difference, but it didnt. when serching my inventory, and chests, the lag spikes occur. Very often with flying around with the elytra.
