Commentingto say that the bug is still present in the most recent release. I hadn’t even thought about how much this issue would interfere with exploration of the new world generation. Really hope this is able to be fixed before 1.18 officially releases.
Unfortunately, the problem is still present in the new 1.17 major update.
Like before, hunger depletion begins ~20 seconds earlier in the Bedrock version, and hunger depletes at a rate of three sprint jumps per hunger point, vs. the 16 sprint jumps per hunger point of the Java version.
I created a video exploring the differences that I've found, but the most notable is that, when sprint-jumping at Normal difficulty, the Java version loses a hunger point every ten seconds, while, in the Bedrock version, a hunger point is lost every two seconds.
Additionally, with the starting saturation values of a new world, players on the Java Edition are able to sprint for ~2 minutes longer, and can jump ~6 minutes longer before they begin to take damage from starvation.
