this thing happened to me too and it's still happening, I thought it only happened to me. literally its changes back to alex or steve every time I open the mc after closing it. its so tiring to keep edit your avatar and add the skin. I'm using android though
my current mcpe version is 1.16.221, I'm not a beta user and I'm using android 10. I have this exact same problems since I downloaded the app which was few days ago. every time I open the game after closing it, my skin is back to default which is either Steve or Alex. its really tiring to keep editing the skin to the customised one from the default.
