Forced into Beta 1.16 during update and cannot leave

Launched Minecraft, saw a prompt saying something along the lines of "Update to experience new features". So, thinking there's an update available, I went to the windows store and saw the option to update. Clicking update didn't do anything. After several attempts, I updated it from program manager instead. Launch the game, and it starts in beta 1.16. I have no option to roll back or uninstall the beta. I checked xbox insider hub to make sure I wasn't still enrolled in the beta from a few weeks ago, and I only have the option to join. No option to leave. Uninstall and reinstall. Still launching in beta. Extremely irritating considering I left work early to play with my son, and have instead spent the past 2 hours trying to leave a beta that I never asked for in the first place.
