When I enter any world (realm, singleplayer, multiplayer), all the text everywhere dissapears (the chat, the text on the blocks, the text on the menu, everything). The only thing that doesn't dissapear is the text on signs. When I leave the world, all the text on the menus and server/world names are gone.

Well originally I encountered the issue on 1.16.1, but since I couldn't tag it as such I tried to see if it happend on 1.16.2 and it does. I have no idea when did it happen or what version I had before I went to 1.16.1
I have updated my drivers very recently yes, altho I am not sure of any software that could have affected minecraft as I've just started playing it again a few days ago (I took a break of several months from minecraft).
I didn't quite get what you meant by trying 1.15.2 with "separate launcher "installations" in different game folders", but trying it in 1.15.2 made the bug happen aswell.

Sorry for not being clear enough here. It is not supported to downgrade versions so if you have a game folder with version 1.16.2 and change the version to 1.15.2 in the launcher it could happen that game options get reset (or possibly even corrupted). It is therefore recommended to create a new entry under the "Installations" tab of the launcher with a different game folder to prevent accidental corruption of your game data. This video (which describes a similar procedure when trying to play snaphots) might help you to understand it.
However since 1.15.2 is affected as well it might indicate that there is an issue with your PC and not Minecraft. Please try contacting Community Support and see if they can help you. Also refer to this bug report if you want so they can get the necessary information you already provided here.
I will resolve this report as "Invalid" for now. However, if other users experience this issue as well we might reopen the report in case it is indeed a bug in Minecraft; or we might update the report if we receive more information, e.g. in case it turns out that the NVIDIA driver is faulty (which has happened in the past already if I recall correctly).
Okay understandable, sorry for the (day late) responses and thanks for taking care of my report.
EDIT: After creating a new installation file and putting 1.16.2 on it, uppon creating a creative world, all the text dissapeared everywhere. So, it's most probably the NVIDIA drivers fucking up with the game.
Unable to reproduce for me
