The bug
The "Times Crafted" statistics column on the "Items" statistics page does not always correctly update the data, causing old data to be displayed instead. Reloading the world can force the statistics to be reloaded.
How to reproduce
1. Look at your statistics for a specific item you want to craft
2. Craft the item
=> Statistic does not always increase

I can't reproduce this issue in 21w42a likely due to the recent fix of MC-55775. I believe this issue here was fixed in 21w16a, although I'm not too sure so don't take my word for it.
I am aware of MC-65198 - however, in my testing, I always used either left-click or shift-right-click.
