Despite the changelog says mace have 5 damage, but in the game mace have 6 damage.

While the changelog states the base attack damage of the mace should now be 5, it should be noted that the mace in fact deals a total base damage of 6 in both Bedrock and Java Editions.
In Bedrock, this is due to the "+<damage> Attack Damage" tooltip not displaying the total attack damage you deal with the weapon, instead displaying the attack damage added to your fist damage, which is 1. So, "+5 Attack Damage" would mean you deal a total of 6 attack damage with the weapon, for example. This is why swords deal 1 extra damage on Bedrock, in fact.
In Java Edition, the "<damage> Attack Damage" tooltip displays the total attack damage you deal with the weapon. So, "6 Attack Damage" would mean you deal a total of 6 attack damage with the weapon, for example.
You can test this with an armadillo (not rolled up), which has 12 health. A mace dealing a base of 6 damage would kill the armadillo in 2 hits, while a mace dealing a base of 5 damage would kill it in 3.
In both Java and bedrock Trident the damage is 9, so the damage is not necessarily 1 less, so I don't think this is a mistake.
