The buttons in the stonecutter UI, unlike those in the villager UI, are not keyboard-navigable, meaning the player cannot activate them using the spacebar to refill the input slot. This impacts both accessibility and the speed at which players can stonecut large numbers of blocks.
Other affected UIs include the loom, the enchanting table and (depending on one’s viewpoint) the crafter input slots. Separate reports have been created for the loom and enchanting table and are linked below. The beacon UI, like the villager UI, is keyboard-navigable.

The reason this doesn’t work is because villager trades are considered buttons and pressing the space bar will activate a selected button (you can test this by pausing the game, pressing the down arrow and pressing the space bar). The stonecutter options are not treated as UI elements and therefore you can’t navigate through them with the arrow keys or activate them with the space bar. There’s probably a case to be made that they should be treated that way, but I don’t think it’s likely that Mojang will consider the implementation of that functionality a worthwhile endeavor.
After some discussion with other helpers and mods I have decided to confirm this so Mojang can decide how to move forward. I also rewrote the title and description to accurately describe the issue.
