Blue Visual Bug + Text Glitches

My game has been pretty glitchy for the last 2 days. I currently have no mods or resource packs installed on this world. (Removed them in case they were causing the issue) I placed down a piece of cobblestone and all of a sudden my text, most of my items, and my player model in my inventory UI turned bright blue. The text also glitched out like crazy so it was basically unreadable. I tried to save and quit to title reset the visuals, but it didn’t work.

I’ve also been having trouble with my text glitching where the letters get cut off in places and have a few splashes of color in them. Sometimes my items also go completely invisible in my inventory and i lose the ability to right click (no current screenshots of this bug, but will come back and update to add photos if it happens again)

If I exit the game entirely and restart, it behaves fine for about 20-30 minutes and then I get another glitch.
