Whenever me or a fellow player has a specific item on the ground or in their hand my whole screen goes invisibile except mobs, fire, lava, water and fellow players.

Turn off mipmap and see if that helps.

I dont have any mods loaded at the time.

Mipmaps is a graphical feature, you can set that in your video settings.
