When I try to edit a version I click on edit, delete or duplicate nothing happens and a bug happens when I try to change the version. I leave you a video to see what happens.
The same buttons work when pressing enter.

As said, could you:
Uninstall the launcher
Delete your Minecraft folder found in ~/.minecraft. (BACKUP YOUR .minecraft/saves)
Install the launcher

You claim that the issue occurs on the Vanilla Launcher, however there are modded Java versions present in your launcher_log file and also on the video you provided.
As mentioned before, please uninstall the Launcher, delete .minecraft folder (copy its content elsewhere before deletion) and then reinstall, restart your computer. Then please try to boot the Launcher.
