This bug report is a parity issue with Java.
Summary:
In the Java version, the large pointed dripstone breaks instantly, while in the bedrock version it breaks gradually (like scaffolding, twisting vines, cactus, etc.).
Scaffolding, twisting vines, cactus, etc. break the same way on both versions.
Steps to Reproduce:
Build a tall pillar with pointed dripstone / Write the command while standing on the surface:
/fill ~ ~ ~ ~ 255 ~ pointed_dripstone
Break the very first block.
Observed Results:
The pointed dripstone breaks gradually.
Expected Results:
The pointed dripstone should break instantly.

This may be a side effect of MCPE-118779. If you build the pointed dripstone column by actually placing blocks (so that it joins correctly), then when you break the bottom block does it work correctly?

Well, you can say yes. If one player breaks the pointed dripstone at the bottom, and the second player is at the top, then the player will fall a few seconds after the bottom block is destroyed, and not immediately. But probably this is a Java problem (see attached report) and this should be solved on Java, not on bedrock.
You can even do it alone:
Build a tall pillar with pointed dripstone / Write the command while standing on the surface:
/fill ~ ~ ~ ~ 255 ~ pointed_dripstoneRemember the coordinates of the lowest block.
Climb to the very last block.
Write the command:
/setblock (coordinates of the lower block) air

Well, you can say yes.
