You can dye signs in Adventure mode

This bug was previously fixed in Java Edition: MC-138580

Steps to reproduce

1. In creative or survival mode, place a sign and type any unformatted text on it.

2. Give yourself any color of dye.

3. Switch to adventure mode.

4. Use the dye on the sign.

Expected result

Nothing happens.

Actual result

The sign text color changes.
