I died a couple of times a few hundred blocks away from my respawn point and my items despawned even though regular items didn't and I got similar results in testing on another world.
steps to recreate:
1. Set a spawn point
2. Move a few hundred blocks away
3. Die
4. Go back to the place of death after the item despawn time
Another thing I noted was that when I died to a mob, it would pick up some items especially armour and weapons so I'd assume they're not instantly despawning.

Mobs picking up items doesn't explain it, since there have been instances where I died of fall damage or even while I was testing it using /kill, the inventory items would despawn after 5 minutes even when in unloaded chunks while the items that I manually dropped wouldn't, which is the correct behaviour.
I have not been able to reproduce this with the steps given. If you are waiting on the death screen for the 5 minutes before respawning, that would explain why the items despawn. If it's not that, could you try to make a video of this happening?

Does mobs picking up equipment explain your observations? That’s an intended behavior that was added in 1.16.0.
