When falling into a slime block, holding down the jump button in versions prior to 1.21.20 canceled the bounce effect and avoided the fall damage, unlike when the player crouches down, which cancels the bounce but takes damage. So now as shown in the video jumping no longer cancels the bounce effect and the player is affected by the slime block. I also tried it in minecraft for windows 11 and the result was the same.

Seems to be an effect of this change:
Jumping no longer overrides any previous greater upward velocity, and therefore doesn't cancel momentum from a Wind Burst explosion when both happen at the same time
I expect this is intended. Cancelling both the bounce and the fall damage seems like it was a bug.
This is inconsistent with Java Edition and is unintended per MC-44537.
