Just updating this as I've figure out the exact issue
Get a Trial Spawner or save a structure with a Trial Spawner in it
Place the Trial Spawner or load it from a Structure Block
Use a Spawn Egg on it
Defeat all mobs in the Trial Spawner
Wait 30 minutes for the reset (The pinned comment says you have to go into creative during this time)
You will notice that it either has no mob or has the original mob spawning instead of what you put into it
While I haven't tested it on ones in a trial chamber this likely is an issue on them as well.

@unknown: If they didn't kill all of the mobs the trial spawner wouldn't deactivate in the first place.
Ok I have an update to the exact issue, if you use spawn eggs specifically it will revert the mob upon completion to either what is was before or nothing depending on if you placed it through a structure block or yourself. This probably applies to natural trial spawners. I'm gathering video to show the issue.
I agree, if you want to set up something for an adventure map, just use structure blocks and put them in that way. Since the data for the trial spawners from there works fine outside of changing it with spawn eggs currently.
Still having this issue and reloading the world does not work. I watched Nick Stories videos and notice that, when he is using a structure block, the trail spawner reverted to Zomibies in place of the Glow Squid or Cow he placed in. Nick Story, did you place the spawner as a zombie before the structure block? I am trying to see if there is a way to have the sturcture block remeber the mob placed so that I can use the trail spawners as intended until this is fixed. Thanks for the help!
