This works as intended. I'm not entirely sure what you mean by "disperse", but I imagine it either means they wander away or they're despawning. Animals wandering is intentional to make the game realistic; it wouldn't be very realistic if they just stood still all the time. Despawning is also intentional, because it helps avoid a buildup of too many animals in one place while another place has none at all.
If you want more animals to stick around in a particular area, you can stop them from wandering by putting up fences, and you can prevent them from despawning but "interacting" with them. Interacting can be a lot of things, including feeding them, putting a lead on them, and maybe (I'm not sure) even just getting close enough to have them look at you and turn to face you for a few seconds. Once you've interacted with an animal, it will no longer despawn under most circumstances.
Bear in mind, though, that doing either of these may increase the number of animals in this area at the expense of reducing them somewhere else.
They did not despawn in the old minecraft so i should see why they would start doing it now with the new one because the big part of minecraft is having lifestock to keep you from going hungry But if they are Despawning what's the point of having cows chickens pigs sheeps etc in the new game when they dont stay around long enough

Sorry for the delayed response. Spawning and despawning works differently in Bedrock than it did in Console Edition. It has to, because the world is infinite; if it worked the same you would eventually have an infinite number of animals. But the new rules don't prevent you from keeping livestock. I have had livestock in pens for months and not lost any to despawning as far as I can tell. (I should know, because I haven't added any new ones in months either.)
Does the fact that you originally talked about them "dispersing" mean that you don't keep them in pens? If so, that's probably not going to work very well. Just like in the real world, if given free reign animals will wander away and be lost.
Animals in a pen or building are not supposed to despawn, so if yours are I need you to confirm that, because you didn't mention either despawning or a pen in your original description.

A few questions to see if this is a known issue.
Did you interact with the mob? (I.E. guided it with food, the mob looked at you, you hit it, etc.)
Where you on multi-player when the mobs disappeared?
Did you enter/leave a nether portal?
