Another way to reproduce this issue with controller or KB&mouse is described on MCPE-32680:
"When holding A to float above the water, you are able to crouch. Doing this makes you quickly sink to the bottom of the body of water. You cannot uncrouch, swim, or jump when this happens, so you are likely to drown."

Experiencing this on android bedrock 1.4.4 LG Q6. Disagree that jumping in water should disable sneak as you need to sneak to avoid burning on magma blocks. Instead, recommend that the sneak button not vanish when jumping into water while sneaking. This would allow players to enter/exit sneak as needed while under water.
Current workaround is to open and close inventory as this causes sneak exit. However, this is not an optimal fix as it only solves half of the issue.

This is a known bug and is fixed with 1.5 beta.

This also affects 1.7.0 when standing near water whilst sneaking, and getting hit by a skeleton knocking you into the water.

Please refer to MCPE-38212 for the related issue with getting stuck in the sneak position when underwater. (This should be fixed in the 1.9 version, but as a workaround double tapping the swim/fly down button should disable sneak.)
