We are both using, Minecraft windows 10 edition, the one with xbox live
So we use xbox live to connect and play with each other. Issue is that wheever we connect to one of the worlds i created, we are able to connect and play with each other. But when I try to connect with her, its always unable to connect. We have tried everything, things like invites and stuff but it will always include unable to connect.

Same thing happens to me. I play on Win10 and my friend plays on an iPad. They can sometimes (It will work normally, but then 5 minutes later it doesn't...) join me, but I have never been able to join them. So infuriating.
It may be that your Xbox Live setting are blocking you. Go to https://account.xbox.com/Settings, choose the "Xbox One/Windows 10 Online Privacy" tab, and ensure that "Join multiplayer games" is set to Allow.
