What I've found so far:
-Siamese and red cats still use new texture
-Smithing Table uses incorrect top texture
-Shield still uses new texture
-Bucket of Pufferfish texture does not match Java Edition's

Actually shields were added in 1.10 along with the texture update. Cat textures were updated in 1.8.0 along with the new cat skins. The pufferfish bucket texture was like that as an exclusive feature to Bedrock.
The only things there that are actually bugs are the smithing table and (maybe) the shield. Everything else works as intended.
@Christopher John Crosby I don't know if I agree or not, but the fact is that the shield had an older texture before in Java Edition 1.9 - 1.13. That texture never came to Bedrock though.

The Classic Texture Pack is intended to restore the official vanilla textures included in 1.9. Features that were only available in the 1.9 Beta or by using the Experimental Gameplay toggle were not official, so they were given the latest textures available at the time the pack was built.
The cat textures were introduced in 1.8.
The bucket of pufferfish being different from Java's is a parity issue. We're currently handling parity issues as feature requests, which you can report via the Feedback site.
The shield and smithing table were not officially available in 1.9. (The smithing table still isn't available in 1.10; it will become official when 1.11 is released.)
The cats and pufferfish bucket had those textures before 1.10 was released, so they're correct.
