I'm running into an extremely irritating issue surrounding my selected hotbar item. Occasionally, when mining, I will pull the trigger, and suddenly have a different item selected. When it happens, there's no way to get around it, you're stuck with whatever the map tells your hotbar to select. The selection seems to be based on your location, based on reasons I'll explain below.
One work around that works about 80% of the time is to hit the Oculus button, then reset the view for Minecraft. Sometimes that fixes the issue, other times, it does not.
I've done more extensive testing around this to try to figure out what's causing it, and how to get around it when I didn't see anything online about this issue. In case the Devs can use it, here's what I've found:
I haven't figured out what triggers this state, but I'm typically mining when it happens. I'll be mining along, and then move a little bit, and find I'm trying to mine with a different tool. I'll switch back to the pickaxe or shovel, pull the right trigger, and sure enough, it's switched to the other item.
This selection seems to be based on your location. If you move a square away from where you were when this happens, it will select the item to the left or right of the current always selected hotbar item. So sometimes, you can position yourself just right to use the tool you wanted, as long as the block that coincides with your tool's location on the hotbar is close enough. You can also reorder your items, since it seems to statically select the same item, again, based on your location.
As an example, I was playing in a cave, collecting cobblestone with a stone pickaxe, which is hotbar number 2. Suddenly I'm holding a piece of rotten meat, which was hotbar number 8. So I moved 6 steps to my left, and was able to mine again, as long as I stayed on that block. Each step transitioned the hotbar selection as soon as I hit the trigger.
I've never had it happen immediately, and initially I thought it was being caused by the pointer on my right hand clicking on the hotbar on my left hand, but now I mine with my left hand held behind me, while still encountering this bug. It typically shows up after about a half hour to 45 minutes of playing, and if the work around doesn't work, I have to quit and restart the game.

I have also tried it with the minecraft window having focus on Windows and with having a browser window on top of it, in case there was a weird mouse interaction going on. That doesn't seem to make any difference.
Cleaning up old tickets: This ticket has not been updated recently (~1 year+) so is being closed as Cannot Reproduce. If you feel this is still a valid issue then please comment, or create a new ticket following the Issue Guidelines.

Still getting this issue on August 1, 2020. Please devs if you can look into it, its ruining an otherwise amazing experience... Minecraft Windows 10 VR is amazing, but this one issue makes it almost unplayable...
September 2020 I also have this issue while using Oculus Touch. I haven't played in over a year and I had the same issue then, which was one reason I stopped playing out of frustration. Very annoying when a creature attacks me and my sword turns into a porkchop.
I hadn't noticed a pattern, it seemed random. I will select an item, and when I use it, it randomly switches to some other item in the hotbar. I switch back either by scrolling back to the item I wanted, or by pointing at it in the hotbar, but using it will again switch to the same unwanted item as before. I did notice sometimes it would select a different item and it might be that I moved over a step or two as the previous commenter stated.
Re-resolving as a duplicate of MCPE-82903.
In case it's relevant, I play sitting down, so I know I'm not turning at all, but every time I reset view, it shifts the screen ~30 degrees to the right. I've tried facing different directions (I have a 360 degree setup with 3 sensors) to see if that would help with the issue, but the same things happen: I start automagically selecting a hotbar item, I reset the view, and it shifts my focus 30 degrees to the right.
