Note this is Windows 10 bedrock, playing Minecraft VR with an Oculus Rift CV1 headset and touch controllers.
When playing Bedrock Windows 10 Minecraft VR, about a few minutes into gameplay, or at random times, whenever you click an object, sometimes the hotbar randomly swaps which item is being used. I have tried everything to fix this bug, but no luck. The only way to fix it temporarily is to Save and Quit and enter the world again. Though the bug happens again shortly after. This is a huge issue when fighting mobs, because while I am swinging with my sword, the hotbar randomly switches to other items like my food, wood, etc, This also happens when mining, farming, randomly out of nowhere the hotbar decides to switch to a different item. This bug makes playing this impossible and very frustrating..
If I didnt explain it well, heres an example: I am randomly mining cobblestone, and I find some coal. I try to mind the coal, but the second I click the coal, my hotbar switches to a random item in my hotbar, preventing me from mining.
Or for example if Im fighting some enemies, I am hitting the enemies with a sword, and then randomly the sword will switch to other items constantly other than the sword.
To fix it I have to restart the game, save and quit then go into the world again. Sometimes the bug happens again right after I restart, but most of the time it gives me 5-10 mins of gamplay before the bug happens again.
I also want to note going into regular 2D mode in VR (hitting Y) does NOT always fix the problem, and it happens there too.

This is still an issue as of 1.17.41
Steps to Reproduce:
1. Boot up the game in VR mode by following the official help article, linked here: https://help.minecraft.net/hc/en-us/articles/360057619052-Minecraft-in-Virtual-Reality
2. Go into any world and play for a while.
3. Keep attempting to mine blocks or attack mobs. Whether or not it happens to any given block or mob appears to be random.
Observed Results:
Item switches from the one you had selected to a random one in the hotbar. The position can be far enough from what you were using that it can't possibly be the result of accidentally pressing one of the grip buttons.
Expected Results:
Mining or attacking with the item that was already selected, instead of a random one from the hotbar.
Hey, I just came to the bug tracker because I recently started playing a bunch of Minecraft VR on the latest version (Bedrock: 1.20.40 (and I think 1.20.41)), and have also encountered this issue. It still exists in the current iteration.
Earlier listed steps to reproduce are still valid.
Additional Description:
I'm not currently quite sure of the cause, but it appears to occur randomly, and quite often (probably at least once every 5 minutes). For whatever reason, the item you are using will become "stuck" to a certain item (Does not seem to have favorite hot bar slots or items) you are holding. Although you can switch away from the item, attempting to mine, or interact in anyway will automatically swap the selected hot bar slot back to the item it got "stuck" on. The last place I experienced this was on a realms survival world.
Workaround: On the bright side, I did find a work around. You don't have to fully save and exit your world to fix it. You can also enter the pause menu, and enter settings, exit back out, and I've found that also tends to sorts it out. This turns it from game-breaking to just a mild inconvenience. Hope this helps.
Four years (!!!) later and this absolutely annoying bug is still ruining the game.
How to reproduce this bug?
Just start Minecraft VR.
