Been having this problem for a while now, not sure what's going on. The last real achievements I've earned were on May 19th, 2019. I've posted in multiple places for support with no luck, so I've decided to file a bug report. I think I've done everything I possibly can to try and work around the issue.
Nintendo and Xbox Live accounts are linked and connected
I have received achievements in the past
World has never been in creative mode and there's no warning banner on any of the worlds saying you cannot earn achievements on this world
Multiple worlds have been tested including newly spawned worlds
Achievements that are having issues include the time played one, smelting iron, and wearing a suit of iron armour
I've deleted the game data and reinstalled
I've tried obtaining achievements on a second Switch with no luck
I've done the task to trigger the achievement and let the device sit for 10-15 minutes with nothing popping

I believe that on the Switch you must be signed on with your Microsoft Account to earn achievements. You said your Xbox Live account is connected, which might be the same thing (I don't have a Switch so I'm not clear about that), but I'm pretty sure the Nintendo Online account shouldn't be involved if you want achievements. I'm pretty sure it's not something you're doing wrong in the game, as these are all easy achievements to earn.

You need to be logged into both the Switch and Microsoft Accounts. The Switch account has to be logged in for the MS account to show up I believe, but for everything to work, they both need to be logged in it seems.
Every patch there is I load it up, throw on iron armour and see if the achievement unlocks (which it hasn't).
Still an issue with 1.13 - the newest achievement doesn't unlock either. Have other people with the same problem.
I went as far as completely unlinking my account and relinking it with no luck.
