We're seeing these pink and black blocks throughout menu screen and on the attached. What is this and how do we fix?

Those are missing textures in your texture pack. I don't know how to fix it, and I've only seen this in Java with a texture pack that hadn't been updated to include new stuff. (I reported it to the texture pack creator and he fixed it, but you can't do that on Bedrock since there's no way to correspond with content creators unless you find one yourself.)
