After milking a cow, the bucket will immediately empty if you interact with it or if you interact with other items in your hot bar. It also occurs sometimes When shooting your bow or attempting to switch another item with it.

I also just noticed this. I have never had a bucket of fish, so I don't know what happens there, but it does NOT happen with either a water bucket or a lava bucket.
Please do not comment about this being a duplicate of MCPE-54623. We are treating this as a separate bug.
The changelog says "fixed some instances" of this, but my tests indicate both the issue described here and the one in MCPE-56957 have been fixed.

This is happening to me as well on iOS. Bucket will empty and revert to its original place when moving from hotbar to inventory. Dropping the filled bucket and picking it back up once your hotbar is full will get it into your inventory successfully.
