I built 2 nether portals 1,000 blocks away from each other and both of them spawned me in the same spot in the nether. If I went back into the overworld, it would spawn me where my first nether portal was built.

This is working as expected, see https://minecraft.gamepedia.com/Nether_portal#Portal_linkage_between_Overworld_and_Nether for a fuller explanation.
Suppose you make a portal in the overworld at 0 64 0, and it generates a portal in the nether at 0 64 0.
If you then make another portal in the overworld at 1000 64 1000, it will look for any existing portals in the nether from -3 64 -3 to 253 64 253. So it will find the 0 64 0 portal and put you there. When you then re-enter the portal in the nether, it will take you to the nearest portal in the overworld, which is your original 0 64 0 portal.

We're tracking this issue as MCPE-39609 which has been resolved as "Working as Intended", this ticket is being resolved and linked as a duplicate.
There are some intricacies to portal linking that can sometimes be misinterpreted as a bug. The mod team here as well as Mojang have done significant testing based on the reports that have been made and are unable to reproduce unexpected behaviour.

If you have a copy of the world available, you might like to upload a copy of it for investigation.
On Windows 10 you can use the Export world feature.
On Android or iOS you need to use a file explorer to navigate to Device storage > games > com.mojang > minecraftWorlds
On Xbox or Switch the only way is to upload it to a Realm, and then download the world on Windows 10 or Android/iOS. (Please do not purchase a Realms subscription just to provide a world to us - but if you have a Realm already this may be a viable option if you wish to do so.)
If the world is larger than 10MB you can upload the world to OneDrive or a similar file sharing site, and then share the link.
