The only possible explanation is that a zombie spawned inside your underground area and zombified the villagers. You may not have enough light at floor level. Try lowering the torches by a block or putting carpet on the floor.

Your images seem to have correct lighting, but maybe you fixed the lighting problem before you took the pictures.
