Sheep not eating grass to regrow wool. We do have mob griefing on. Was working fine while on beta. Just re-installed to go to 1.16.2 non-beta and now sheep do not eat.

Are you still having this issue in version 1.16.100? If so, does MCPE-99972 describe the same problem?
