I'd like to add that on my device while in living room mode, the hands/viewmodel are rendered, but entities such as wolves are untextured. their outline is filled with what looks like a static skybox texture. These two visual bugs interchange upon toggling viewing modes, and might be related.

I'd like to reopen this issue, albeit for the Gear VR, on Minecraft Bedrock v1.2.13.
Using the 2017 USB C model Gear VR, with my Samsung Galaxy S8, running Android v8.0.0.
Oculus Gear VR v3.39.0.7.3291 (102277180). Samsung Experience v9.0.
Hands, tools, and every other view model do not render when in VR mode. In living room mode, the viewmodel is rendered to the living room's 'television' as expected. Upon entering VR mode, the hand, tool, or other viewmodel disappears. There are also some other visual glitches that seem to be associated with this perspective transition.
I have had this issue in past versions, though restarting the game or the oculus experience would usually fix the problem. As of v1.2.13, the issue persists even after restarting the game, the oculus experience, and/or the phone itself.
Furthermore, I have tried several combinations of uninstalling the Google Play app (non-VR), the Oculus store app, and reinstalling just the Oculus VR app. Backed up world saves and deleted all com.mojang data. The issue persists! 😞
Here is a video of the issue, which I've recorded using Oculus Home on my Gear VR. (Note that the block breaking texture animation seems to be broken / the crafting table has a strange purple texture. This problem seems to appear when I begin the recording software, and I believe it is unrelated to this bug in question, as it does not happen during the course of normal (non-recorded) gameplay)
In living room mode, some entities such as tamed wolves are untextured, and a sort of skybox of the living room environment can be seen inside of their outlines. Upon entering VR mode, the wolves are textured, but the player's viewmodel disappears.
Finally, I would like to apologize if I'm posting this issue in the wrong place by reopening this ticket. The issue has been irking me for some time, and I can't seem to find much detailed information on the web, or on the Bedrock JIRA. My hope in posting this is that I can provide enough information to help you fix this for me, and anyone else who might be having this problem but won't report the bug.

I play Minecraft in Gear VR on my Galaxy S8, and I've had a similar trajectory with this issue.
In the past, the player's hand (and crosshair) would occasionally fail to render upon entering VR mode. A restart of the game used to fix this.
Now, after recent updates, no amount of restarting the game or Oculus Home itself will fix the problem.
I concur with Nicholas - it's a glaring glitch, and can make gameplay very difficult.
I would like to add that this issue doesn't seem to be specific to tools with Mending. I've experienced the issue during the course of normal gameplay with pickaxes, shovels, and bows - with and without Mending.
I experience this issue very frequently - most often in the Nether using high efficiency picks on netherrack. But the issue happens while using other tools in the nether and the overworld alike. Second most frequently, I would say, is the bow. While firing, occasionally the bow will shake rapidly as if it were being switched out with another tool in the hotbar several dozen times per second. (It doesn't appear that this is actually happening, as only the bow or tool in question is shown - but it appears as if the holster animation is rapidly repeating.)
I have experienced this issue in both the Windows 10 and Gear VR editions.
