Isn't that just lighting? The item first appears as though it's in complete darkness (blueish dark), and then updates to the correct light level?
There are a lot of programs you can use, maybe look on youtube for tutorials
Can you attach a video of the bug?
Did you restart your game after changing your skin?
Can you attach a crash report? It should be in the folder .minecraft\crash-reports
Is your mouse sensitivity high outside of minecraft as well?
You can't exit a world without saving it
You can change your mouse sensitivity by going to Options -> Controls -> Mouse Settings and changing the Sensitivity slider.
Works as intended I believe, don't trust the minecraft wiki on everything, it's not official.
Related to MC-114504, possibly a duplicate, maybe when the hitbox is right next to the block it counts as being inside the block

Edit: version was 1.16.1, and it was on a server. Breaking the bed and placing it again did not solve the issue
