My realm does this with "April," but only in some cases. If I write "April Station" on a sign by itself it's fine, but when I add it after a couple other words it gets hashed. (Linebreaks are also not working properly but that's probably related to a different issue.)
I've had the same issue on Win10 on my realm. It happens when I have not placed any dye or glow sacs.
I was able to log in to my realm on the iOS version and update the signs, but the formatting wasn't correct–all the linebreaks disappear. When I tried again on Windows 10, the text appears on the sign for a little while, then disappears. Today the text just appeared for a second, other times it will stay until I leave the area and come back.

I also haven't seen any bees or beehives in any of my bedrock worlds for several months. I think the last time one generated was a few versions ago. All of my Java worlds have multiple hives in the expected biomes, though.
[Update] I've since found one hive in a newly generated chunk in bedrock.
This bug is super inconsistent–sometimes text only disappears if you use dye or glow ink, sometimes it disappears immediately, sometimes it stays and then disappears when you reload the chunk. This is what I did to repro the screenshots below:
Steps to Reproduce:
1. Enter text
2. Fewer characters tend to stay
3. Enter >15 or so characters
Observed Results:
Text immediately disappears before exiting the sign editor
Expected Results:
Text should stay on the sign permanently
It's super frustrating because again it's super inconsistent, I've been trying any number of things to find a workaround for a few weeks and I haven't found anything that consistently helps.
