I have this issue as well in Minecraft from the Windows store when using sensitivity over 50 and had Logitech oprions recently installed with wheel scrolling set to 3 in that software.
I temporarily 'resolved' it by uninstalling options since that's when I noticed the erratic behavior started. I can still use Windows mouse options mouse scrolling set to 3 lines and 60 in Minecraft for the sensitivity.

For users searching these threads with audio distortion and no specific headphones. I had spatial sound set to "Windows Sonic for Headphones" turned on. This affected my server and local play.
Turning off Spatial Soiund returned the sound to normal.
