I am playing on a server, but, my friend is also doing this at the same time than me and his villagers do change instantly. I also thought that lag may be the problem, but then I saw my friend´s villagers and discarted that thought. 

Without resource packs it is still crashing. Why was this closed as resolved if I have not said anything? Nice support huh
