This is incredibly unintuitive and actively harms gameplay. In survival, I need to babysit the sulfur cubes for the full time it takes to make them grown, and then ensure that I bucket the adult otherwise it too will disappear. The only way to apply persistence for small sulfur cubes is to waste two golden dandelions on it if you don’t want to name them (naming cannot be undone and the babies receive the adult’s name). Other methods of persistence are impossible: you cannot leash small sulfur cubes, you cannot put them in buckets, you cannot put them in boats, and feeding them slime doesn’t give them persistence either. Furthermore, for sulfur cube farms, it would mean all of them could disappear if you happen to leave its range. This is an incredibly unintuitive inconvenience for something that should be easy and foolproof. The simple solution is to make bucketing a sulfur cube apply persistence to it. Once this is done, the baby sulfur cubes will also receive persistence and any future ones that come from those.

This is in 1.21.9-rc1 for clarification.

I have also experienced this issue.
If a copper chest is being constantly searched, it freezes any copper golem attempting to reach it, therefore slowing it down tremendously. It won’t search for any other copper chests in the meantime which makes that copper golem useless.
I’m only using 4-5 copper golems in that hole, and one copper golem outside of it.
This is definitely something that survival players would notice.
