I think I have read somewhere (probably minecraft wiki back in 2015) that chickens only drops 1 meat even if they are killed by looting.
I can confirm that this is intended as Java edition don’t have an enchantment glint for Mob skulls and pumpkin.
Also you can enchant pumpkin with curse enchants using an anvil.
It happens after I updated to 1.16.100 as well with the Villagers and endermen.
I have the same problem on IOS
It affects 1.16.210 aswell.
