I close the launcher without launching the game and reopen it, it saves.
I can confirm this on Arch Linux (KDE Plasma) running Minecraft 1.17.1
I feel like there are multiple glitches related to this. For some people including me, disabling V-Sync does NOT help at all. Some people claim it's to do with max FPS setting, but it won't help either. That's why I believe these are totally different issues with the same effects.
