You're using an iPad, there is no mouse support for iPad so it doesn't make sense to add a keyboard support.

Are you going to walk with the keyboard with your hand blocking your screen?

You need to wait for xbox to login or it would use a different "local" account. Or it may be possible that you just directly closed minecraft without exiting to the menu screen first.
