Due to the changes to the rendering engine in 1.14, VBO support is now required and therefore can not be disabled anymore.

That is intentional, otherwise beacons would not work in the nether.

Magma Cubes were never affected by fall damage, this is intentional.

Attached are some screenshots showing affected chunks over time, those are created with Mapcrafter (which uses the lightning and heightmap for map generation).

Notable changes to those chunks happenend under the following circumstances:

  • Leaving the area via nether portal

  • Entering the area via nether portal

  • Disconnecting from the server whilst in the area

I did some tests and if they are able to reach and use the workplace (not only see it), the conversion back to unemployed happens way faster.
(They did not need to actually reach it, just be able to pathfind to it).

Although the conversion to unemployed still happens on some occassions if the villager was only able to see the workplace.

See attached screenshot for the testing setup I've used.

Cows (and other animals) can only breed every 5 minutes.

If they've breed in the last 5 minutes, the will behave exactly as you've described it.

Villagers will only loose their profession if they check for the workplace block and notice that it was detroyed.

This only happens during their "work" time (see this https://minecraft.gamepedia.com/Villager#Schedules) and they must be able to actually see the position where the block was use the workplace.

Alternatively you could move them 96 or more block away to let them forget their profession.

Also keep in mind that this will only work if you have never traded with them, once you've traded with them (= have any Experience) they're stuck with the profession.

Regarding the second problem (farmer not farming), I have no glue but might be related to MC-148715 and/or MC-148671.

Check if you have any other villagers in a 48 (or better 96) block radius around those ones, which might have been assigned to the workplace.

Any unemployed villager should be able to assign themself to an unused workplace in a 48 block radius and will only forget about it's preofession, if the villager moves 96 blocks away from the workplace (and has not been traded with).
