I think you are seeing this same issue here. Lately it seems there is a bug where devices can't connect to Windows machines. No idea how it happens, it just randomly does.
Even reinstalling windows didn't help

Can confirm this issue as well. Daughter's Nintendo switch cannot join my Windows 11 (latest build) PC suddenly. Working one day and not working the next, nothing has changed environment or hardware wise. Not even software updates!
It was working on 1.19.51 for awhile, up until about Jan 6 or 7, then all of a sudden it just stopped. We can still connect if I host using my Microsoft Surface which is latest Win10 build, or if my daughter hosts on her Nintendo switch.
I am a network admin by trade so I have done troubleshooting here, including:
putting my pc, and the switch on an entirely different network (removing my firewall as a suspect, even though it was working fine before)
reinstalling minecraft on both devices
repairing minecraft on both devices
updates on both devices (there were none in the queue)
double checking Xbox account permissions
removing eachother and re-adding as friends on our MS accounts
REINSTALLING WINDOWS (see below)
It gets crazier though. I got on with support and they gave me the basic troubleshooting spiel which I had already done. Support guy told me that my last option was to reinstall Windows. Given my w11 PC only really has some games on it and a handful of other software, it was a pain but not a big one so I did it. There were 2 issues from here on:
my daughter and I lost all our Minecraft worlds
the nintendo still can't connect to this PC
Once I let the support guy know it still wasn't working, he directed me here to this known issue. Would have been nice if he did that before I reinstalled Windows but w/e. I got a nice fresh PC now I guess :/
Anyhow, this is clearly a problem, crossplay from the Nintendo has always been ultra hokey. It really needs some attention.

You can't play LAN cross platform without it, you have to have an active Switch Online subscription, and Microsoft account. This is definitely an issue in Minecraft or perhaps with their cross platform implementation using the MS account. I am leaning towards Minecraft itself since this issue only seems to be happening to people (just suddenly stops connecting) after the latest patch
