I have come to realize that this was never an issue.
A walking chicken obviously sounds like a microphone getting beaten with a stick.

Yes, this is quite disturbing, I thought my earphones had a problem before realizing it was the sound of the chicken walking 😛
Unless the chicken is making sounds other than clicking when moving (as intended) this can be closed.
If the sound in the resources folder is the same sound you hear when the chicken is walking, it is indeed working as intended.
And moderating includes getting rid of obvious things which are working as intended. I had a bug report earlier which was "blocks float" - a standard Minecraft mechanic. Should I have just left that there?
This more falls into the category of being an "annoyance" - which isn't what this tracker is for.
THIS IS NOT RESOLVED by any stretch of the imagination. If Majong, Microsoft, and its programmers WANT PEOPLE TO GO AWAY, this is working.
So either FIX it or add a checkbox on how to turn that ish off. Deleting those files doesn't work... stupid minecraft puts them back. 😞
@Chris K, you can "fix" that with a resource pack, this is what I did.
This video shows how annoying this clicking sound can be and has the download link of my resource pack. If you just want to keep the sound fix only, delete everything except sounds.json and "\assets\minecraft\sounds\mob\chicken" folder.

Its more of a click as opposed to a crackle. Similar to claws on concrete.
